Marathon training means running….a lot. Marathon training also means thinking (also a lot) about nutrition and hydration, which is why meal planning has become even more important in our house to make sure that we (I) make great food choices that will fuel me on my runs and during my day. While we often turn to our google drive spreadsheet of favorite meals while meal planning, sometimes I pull out old recipe books and pieces of faded printed paper with recipes from my on again off again years at Weight Watchers…like last week when I pulled out a recipe for Honey Mustard Chicken.

Except that when I started looking at the recipe print out, I realized that I had done some cutting and pasting and the recipe made very little sense….so I looked it up….and while I found the orignal recipe, another one caught my eye…Crusted Honey Mustard Chicken. The thing that intrigued me about this recipe is that the crusting for the chicken was made from cereal and the honey mustard was made with yogurt.

Cereal Crusted Honey Mustard Chicken

1 pound uncooked boneless chicken breast

1 cup crushed cereal (we used Puffins because it is low in sugar and has a nice crunch)

1 cup chopped scallions

salt and pepper

Honey Mustard Dressing

We made our own dressing. The recipe called for 2/3 of a cup but we made a bit more because although I am not a dressing fan, I enjoy a fresh tasting dressing made with plain greek yogurt. *My favorite is still the curry yogurt dressing that I started making last fall. I end up using it in my salads, with grilled chicken and to dip vegetables for snacking.

  • 2 tbsp Honey
  • 1 tbsp Spicy Mustard
  • 1/2 cup Plain Greek Yogurt (non fat)
  • salt

*Although I started to write down the measurements, at the end I added a dab of this and a dab of that…bottom line is by adding ingredients in small increments, you can adjust the taste of the dressing.

Preheat oven to 425F. Coat pan with olive oil cooking spray.

Combine honey mustard dressing with scallions.

Place cereal crumbs on a plate or in a shallow bowl. Dip chicken into dressing and then coat with cereal crumbs. (make sure to use a spoon and a separate plate so that you dont “contaminate” the extra dressing with uncooked chicken).

Place in pan and bake about 20 minutes or until it is golden brown.  (We made the mistake of turning the chicken- this made one of the sides not as crunchy).

Use the remaining dressing to drizzle over the chicken.

{The Weight Watchers recipe says that one portion is ten WW points, but since we made our dressing with non fat plain greek yogurt, it is probably more like 6-8 WW points.}

The good news is that everyone in the family (including my daughter who is not a huge chicken fan) liked our new cereal crusted honey mustard chicken recipe. The fact that it had cereal in it was a winner for all the cereal lovers in the family. The fact that it was quick and that we had most of the ingredients readily available in the house made the two chefs happy. And the fact that it was healthy made my marathon training brain happy.
